INGREDIENTS
For the Sauce:
4 tbsp Mayonnaise
2 tbsp Teriyaki Sauce
1 tbsp Honey
1/4 tsp Cayenne Pepper
For the Burgers:
4 Pineapple Rings
1 Red Bell Pepper (seeded and sliced into rings)
4 Beef Burgers
7-8oz Spam (sliced into 4 slabs)
4 tsp Teriyaki Sauce
4 slices Sliced Cheese
4 King’s Hawaiian Burger Buns
0.5 whole Red Onion (thinly sliced)
4 Lettuce Leaves (plus extra for sides)
DIRECTIONS
1. To make the sauce, stir together the mayo, teriyaki sauce, honey, and cayenne. Set aside.
2. Griddle the pineapple and bell pepper rings in a skillet over medium-high heat until they have great grill marks. Set aside and add the spam slices to the pan until they have grill marks on each side.
3. Cook the burgers over medium heat for 4 to 5 minutes on the first side, then flip them over and add a teaspoon of teriyaki sauce on top of each one. Place a slice of cheese on each burger and let it melt while the burger cooks through, about 4 minutes longer.
4. Separate and toast the bun halves either in the toaster or under the grill. Once lightly charred, remove and start stacking the burgers with cheese, spam, burger sauce, red pepper slices, red onion, lettuce, and pineapple inside the buns. Serve with extra burger sauce on the side.
INGREDIENTS
2 large cups frozen pineapple chunks
1 cup vanilla ice cream
1/2 cup pineapple juice
DIRECTIONS
1. Blend all of the ingredients in a good quality blender or food processor, starting on low and slowly increasing the speed. (start with just half of the pineapple juice and add more as you need it).
2. Enjoy immediately! You can also store it in the freezer for later, but let it thaw on the counter for 20 minutes before eating.
We'll be taking a week or so off of the themed dinners, but join us when we return with Restaurant Copycat Week.
