Disney Movie Week (2) Themed Dinners - Tarzan

Tarzan




Tonight is another Bug-a-Boo favorite.  She would go around the house singing the "Shoo-bop" song and she just loved the monkeys and elephant.

Because Jane and her father are from England I decided to do an English classic.  I have never made it before (or had it) so I was a little nervous.



The menu is set...

Scalloped Potatoes
Asparagus with hollandaise sauce

TARZAN AND JANE'S BEEF WELLINGTON

INGREDIENTS

4 small, trimmed beef fillet steaks

Olive oil

1 shallot, finely chopped

Butter

7-8 oz Baby Bella mushrooms, finely chopped

Thyme a couple of sprigs, leaves stripped and chopped

1 box puff pastry (2 sheets)

8 slices prosciutto

1 egg, beaten to glaze


DIRECTIONS


1.  Heat a frying pan until very hot. Rub the steaks all over with olive oil and season well. Sear for a minute on each side, then remove from the pan and leave to cool completely.

2.  Cook the shallot in a knob of butter until soft, add the mushrooms and thyme, then season and cook, stirring occasionally. The mushrooms will give out a bit of water, so keep cooking them until there is no moisture left in the pan. Leave to cool.



3.  Roll out the pastry to 1/8 inch thickness. Cut out 4 circles that are 1/2 inch larger, all the way around, than the fillets, and 4 more circles that are 1/2 inch larger, all the way around, than the smaller circle. Sit the smaller circles on a baking sheet.  NOTE:  This is the step that took the longest.  Make sure you have plenty of extra flour so that the pastry doesn't stick to the counter and rolling pin.  





4.  Sit the fillets on 2 overlapping pieces of ham and top each fillet with some of the mushroom mix.

5.  Wrap each of the fillets up in the slices of ham.

6.  Sit each fillet on the smaller pastry circles, then brush the edges with egg.






7.  Drape over the larger circles and press to seal, making sure there are no air pockets.




8.  Mark the edges with the back of a fork and glaze the outside with egg.




9.  Score the top of the wellingtons. Chill for 15minutes. Heat the oven to 392F. Bake the wellingtons for 12 minutes for medium rare, 15 minutes for medium.



For the sides I just made Kroger boxed Scalloped Potatoes and I sautéed the asparagus and made the hollandaise sauce from a packet.  I knew the beef wellington was going to be challenge enough so I wanted to keep the sides simple and easy, hence the pre-prepared mixes.


I was so happy with the way they turned out.  The filet was cooked perfectly and everything was so yummy!

One of Bug-A-Boo's favorite parts of the movie was the Trashin' The Camp song.  It feautures the gorilla Terk, so for dessert I made Terk's Baked Jungle Bananas.




TERK'S BAKED JUNGLE BANANAS

INGREDIENTS


8 yellow bananas, not overripe

1 egg

2 tbsp orange juice

1/2 cup bread crumbs (Panko)

1/2 cup vegetable oil

2 tbsp sour cream

brown sugar to dust

Nutella (optional and not authentic)


DIRECTIONS


1.  Preheat oven to 350F



2.  Slice each banana into 3 equal parts



3.  In a small bowl, beat the egg and orange juice


4.  Place the bread crumbs on a plate or a flat dish



5.  Dip each banana piece into the egg/orange juice and then roll them in the bread crumbs



6.  Heat oil on medium high and fry the bananas until they are a golden brown all over.



7.  Transfer the bananas to a cookie sheet



8.  Place in the oven and bake for about 5 minutes.



9.  Let cool slightly and top with sour cream and brown sugar (or nutella)


10.  Enjoy warm!





These were so good.  I was worried about the sour cream but it really worked.
