The Wizard of Oz Cookbook Themed Dinners - Thursday

Today we are going to be having Breakfast for Dinner.  This is always a special treat and something everybody loves.

I have chosen a few recipes from The Wizard of Oz Cookbook...

Kansas Cornmeal Pancakes
Bluebird's Blueberry Syrup
Over The Rainbow Fruit Kebabs
Bacon

I am not a big fan of pancakes.  If I have to choose between pancakes (or French toast or waffles) and eggs, I will always choose eggs.  I don't know why but I just don't like them.  The Kansas Cornmeal Pancakes are a whole different story though.  I have made these before and they are super yummy!


KANSAS CORNMEAL PANCAKES
makes about 2 dozen 1-1/2 inch pancakes

INGREDIENTS:
2 Tbsp sugar
1 cup flour
1 cup yellow cornmeal
1/2 tsp salt
1-1/2 tsp baking powder
2 large eggs
1-1/2 cups whole milk or 1-1/4 cup low fat milk
6 Tbsp unsalted butter, melted

DIRECTIONS:

In a medium mixing bowl, stir dry ingredients together.  Make a small well in center.  Put eggs in well and being to whisk at center, working slowly toward the sides.  While whisking, pour the milk into the center in a thin, even stream.  Mix until all the milk and dry ingredients are incorporated.  Whisk in melted butter.  Make pancakes in a nonstick skillet or in a skillet brushed with oil.  Serve with Bluebird's Blueberry Syrup.

BLUEBIRD'S BLUEBERRY SYRUP
makes about 1-1/2 cups syrup

INGREDIENTS:
3/4 cup blueberries
3/4 cup pure maple syrup

DIRECTIONS:

Cook blueberries and syrup in a small saucepan over low heat for about 10 minutes, until the mixture is thick and simmering.  Serve hot with Kansas Cornmeal Pancakes.
