The Wizard of Oz Cookbook Themed Dinners - Wednesday

Tonight we are watching the original, the classic, the greatest...The Wizard of Oz (1939) starring Judy Garland, Ray Bolger, Jack Haley, and Burt Lahr.




This has been my favorite movie since I was a little girl.  Every Easter holiday we would pile around the t.v., dad would make his famous popcorn and for 2 hours I was quiet and completely enthralled and taken away to this wonderful land.  

Our dinner tonight revolves around the Witches of Oz.

The Fiery Filet was another appetizer from The Wizard of Oz cookbook.  It is thinly sliced filet, crusted with a fiery spice rub and placed on sliced French bread with a mayonnaise based dressing.  I just took the spice rub and crusted some filet mignon steaks.

FIERY FILET

WITCH:  An you!  I'll use you for a beehive!  Here, Scarecrow!  Want to play ball?
SCARECROW:  Oh!  Look out!  Fire!  I'm burning!  I'm burning!  Oh!  Take it away!


INGREDIENTS:
olive oil
2 cloves garlic, minced
1 tsp salt
1tsp ground black pepper
1/2 tsp cayenne pepper
1 Tbsp dried oregano
2 tsp dried thyme
1 tsp paprika

DIRECTIONS:
Rub steak with olive oil and minced garlic.  Let sit for 30 minutes to an hour at room temperature.  In a small bowl, stir together salt, black pepper, cayenne, oregano, thyme and paprika.  Coat filet with spice mixture.  



Preheat oven to 425 degrees.

Once your steaks have come to room temperature and have been seasoned, heat an oven proof pan over medium-high heat.  Add Olive Oil and let it get hot.  Then add the filets and let them cook undisturbed for 4 minutes.  DO NOT move the filets around in the pan during this time.  Then, using a pair of tongs, flip the filets over to the second side and IMMEDIATELY transfer the entire pan to your pre-heated oven.  Cook the filets in your oven for 5-8 minutes, depending on your preferred level of doneness:  5-6 minutes for rare, 6-7 minutes for medium-rare, 7-8 minutes for medium,  or 9-10 minutes for medium-well (only if you have a 5 year old who doesn't like to see any red in there meat or a 71 year mother who has the palate of a 5-year old when it comes to steak.  UGH!!!!)

Carefully remove the sauce pan from you oven and transfer the filets to a clean plate.  Tent them with foil and let them rest for 5-7 minutes.  Do not leave to rest in the pan, or they will overcook due to the residual heat in the pan.



GLIDA'S PINK POTATOES - I just boiled some red skinned potatoes and then smashed them, drizzled with olive oil, seasoned with salt, pepper and grated parmesan cheese and cooked in the oven at 450 for 10 minutes.  



THE WICKED WITCHES PEAS - literally just steamed green peas, topped with a pat of butter and salt and pepper.

It was a really good dinner.  Three of the steaks were cooked perfectly.  





The Queen Mum unfortunately always makes me cook her steaks well done!!!  It pains me, but I do it.  Then to add insult to injury she does this...


...yes, you are seeing that right.  She put ketchup on a filet mignon.  I love her but...


HONESTLY???!!!!
